Smoked Peanut and Pretzel Nutella Cookies

Smoked Peanut and Pretzel Nutella Cookies.. what a mouthful! This is the perfect cookie ever invented – basically because they cookies are stuffed with oozing Nutella (and who doesn’t love that infamous hazelnut spread?). Smoked Peanut and Pretzel Nutella Cookies Cookies are my weakness and after finding myself craving a good chocolate cookie, I decided to whip up a batch (because what’s better than one cookie… a whole tray!). These cookies satisfy any sweet, salt, chocolate or nutty craving fast. The dough is made using real chocolate (not cocoa powder) and further stuffed with Nutella in the middle. Dark chocolate is then dipped & drizzled over the top of the cookie and generously sprinkled with a smoked peanut and pretzel salted crumb. Salt cuts through the intense sweetness of the sugar and brings out the flavour in the chocolate and nuts, adding a real boost to the flavour of the cookies. The result being soft sweet and salty cookies that are loaded with oozing Nutella after every bite. Smoked Peanut and Pretzel Nutella Cookies Cookies really are the ultimate & I promise these will disappear fast. The real challenge is not eating the whole batch. If that’s even humanly possible.  

Smoked Peanut and Pretzel Nutella Cookies

  1. 1/2 cup butter
  2. 1/2 cup brown sugar
  3. 1/2 cup caster sugar
  4. 2 eggs
  5. 1 tablespoon vanilla extract
  6. 1 cup Nutella + extra for stuffing
  7. 50g Cacao Nibs
  8. 2 cups plain flour
  9. 1 teaspoon baking powder
  10. 1/4 teaspoon salt
  11. 250g dark chocolate
  12. 100g unsalted peanuts
  13. 100g pretzels
  14. Smoked salt for sprinkling
  1. Melt the butter, in a large bowl
  2. Add both sugars and stir until combined
  3. Add eggs and vanilla, mixing until incorporated
  4. Melt Nutella over a double boiler until thin, smooth and glossy. Pour in to mixture and mix to thoroughly combine.
  5. Add cacao nibs, flour, baking powder and salt and stir until incorporated
  6. Place the cookie dough in the refrigerator for no less than 20 minutes
  7. Meanwhile, preheat the oven to 180 degrees
  8. In a food processor whiz peanuts until a chunky crumb forms, add pretzels and whiz to desire consistency. Place in a separate bowl ready for sprinkling
  9. Roll dough into balls on a prepared cookie tray lined with baking paper
  10. Create a thumb shaped imprint in the centre of the dough balls and add a teaspoon of Nutella into the imprint
  11. Using more dough, cover the Nutella (like a ravioli) and roll dough back into a ball
  12. Slightly flatten each ball with your hand
  13. Bake for 10 to 15 minutes, until the centres look underdone and the edges are firm to the touch
  14. Let cookies cool on a wire rack
  15. Meanwhile, over a double boiler, melt the dark chocolate and let cool slightly
  16. When cookies are cool, either dip or drizzle chocolate onto the cookies. Place on baking paper and lightly sprinkle with peanut and pretzel crumb, followed by smoked salt
  17. Let the chocolate cool and set before serving
  18. Serve and Enjoy!
  1. When letting the chocolate cool, the cookies can be placed in the refrigerator to quickly speed up the process. However they taste just as good warm and with the melted chocolate still hot. The choice is up to you!
